A barraca meal is not planned from one membership total. Plan by day, meal and arrival time. Breakfast before an activity, a seated lunch and dinner after a parade may involve different groups and different routes through the venue.
This guide helps the committee or association arranging the meals. For a proposal, see Hogueras and barraca catering and local fiestas. Check the establishment’s authorisation and conditions with the council.
Put the programme and kitchen timings on one sheet
Alicante City Council places Fogueres de Sant Joan from 20 to 24 June. Source checked 31 October 2026. That traditional period does not establish delivery access, setup or each installation’s opening times.
Match the official programme for the edition against the proposed meals. Record when members leave for a parade, when they return, which streets may be closed and who receives the team. Coordinate with the live fiesta calendar, without treating an older programme as confirmed timings.
Barraca or racó: check what is authorised
The glossary explains what a Hogueras barraca is. To arrange cooking or service, also request the installation’s category and conditions: access, activity, capacity and working areas need checking against the actual authorisation.
The municipal racó and barraca procedure, updated 14 August 2026, requires a technical project and emergency action plan. It states a general minimum application period of one month before street occupation for setup, unless a specific period applies. This is an administrative deadline for that procedure, not a Xepep booking lead time. Check the edition’s instructions.
A separate count for each meal
| Service | Whom to count | What to confirm |
|---|---|---|
| Morning meal | People present before activities | Departure time and available window |
| Lunch | Confirmed members, guests and children | Tables, menu and alternatives |
| Dinner | That evening’s guests, not a copied lunch total | Return and serving times |
| Working team | People with an agreed meal | Portion and shift, without duplicates |
Use one confirmation list and one person to communicate changes. The comparsa meal guide covers coordination; see the marquee bar guide for drinks and payment.

Keep kitchen, tables and bar routes clear
Mark deliveries, storage, cooking, collection, tables and waste on the layout. Guests should not have to cross the working area to sit down, and replenishment should not block the routes set out in the project.
Confirm electrical capacity, water, refrigeration and delivery windows. Do not assume one visible socket can run every appliance or that a street stays accessible throughout the programme. Agree who checks each supply and what equipment each party provides.
If live paella cooking is proposed, check the authorised equipment and activity. The fire and permits guide distinguishes forestry checks from municipal ones; an urban installation must be assessed under its own conditions.
A fiesta menu with clear responsibilities
You can suggest appetisers followed by rice as a starting point, then specify dishes, portions and service. If members bring coca amb tonyina or other food, agree receiving, storage and ingredient information.

Review allergen information and alternative meal delivery before agreeing menus, including evening and morning meals. An alternative confirmed for one lunch should not automatically be copied to every other service.
What to agree with the committee and supplier
Request an itemised breakdown of food, drinks, staff, tableware, setup, transport and clearing. Name a committee contact and a service contact, record counts by meal and agree how timetable changes are communicated. Ask for any minimum, price or booking deadline to be recorded in the proposal.
Request a quote for your barraca meals with the available layout and programme, or ask how to prepare the information. The proposal will confirm availability and scope for your establishment.
